L.A. Mag Food Critic Eddie Lin got to try competitors’ recipes before ABC The Taste launched to national audiences. What’d he love most? ABODE Chef Gregg Drusinsky’s pho gras, a creative take on the traditional Vietnamese soup. In Drusinsky’s dish, he includes seared foi gras along with jalapenos, lemongrass, galangal, ginger, garlic, shallot, scallions, kaffir lime leaf, cilantro, star anise; plus some crunchy cucumber noodles, rendered duck breast, sous-vide duck leg and some good ole nuoc mam. Drusinsky’s ridiculously creative (but fundamentally sound!) flavors got him scooped up by Ludo Lefevre on ABC’s The Taste.
