L.A. Mag Food Critic Eddie Lin got to try competitors’ recipes before ABC The Taste launched to national audiences. What’d he love most? ABODE Chef Gregg Drusinsky’s pho gras, a creative take on the traditional Vietnamese soup. In Drusinsky’s dish, he includes seared foi gras along with jalapenos, lemongrass, galangal, ginger, garlic, shallot, scallions, kaffir lime leaf, cilantro, star anise; plus some crunchy cucumber noodles, rendered duck breast, sous-vide duck leg and some good ole nuoc mam. Drusinsky’s ridiculously creative (but fundamentally sound!) flavors got him scooped up by Ludo Lefevre on ABC’s The Taste. Much to the chagrin, as Lin points out, to globetrotting Anthony Bourdain.
